Tested that command of yours, it does nothing...
The only way of having unlimited time is the DM, TDM or Construction mode
so I guess theoretically you could have "unlimited time" in standard mode.

No, you can't. It will dependon how long the game is running.
Ex.:
You played 3 minutes and you change the timelimit to 5 minutes in the las second, so 2 minutes last.
5-3=2
So you'll never be able to go on over 15 minutes of gameplay.
